Baked Potato Recipe

I am so happy to have a place to refer to our family recipes, even the basic ones!  With the importance of time and temperature in cooking, it is sometimes hard to remember the specifics for every little thing.  I don't make baked potatoes often, so when my husband prepared some for dinner last night, I was glad to add the timing and temperature details to our family blog!

  • 2 large russet potatoes
  • 2 tablespoons of butter
  • 2 tablespoons of coarse kosher salt
  • optional toppings:  butter, shredded cheddar, sour cream, chives, bacon bits
  1. Wash and dry the potatoes well. 
  2. Microwave on high heat for 10 minutes.
  3. Place each potato onto aluminum foil.  Sprinkle with 1 tablespoon each salt, then top with 1 tablespoon butter on each.
  4. Wrap well and finish in the oven at 400 degrees for 10 - 12 minutes.  Give them a squeeze to test for doneness.

I didn't pick out this potato.  I think it's a weird shape - I would have picked a much prettier one myself.
My husband made this wonderful meal for me for our date night last night.  He grilled the ribeye to perfection, and I picked the one with the thickest outer layer that looks like it could be detachable.  It's my favorite part because of its tenderness.  When I shop for ribeyes, that's what I look for...
