LENTIL SALAD WITH AVOCADO, ORANGE, & POMEGRANATE

Lentils are great because they're low in fat, but high in protein, fiber, and iron. Team them up with orange slices, avocado, and pomegranate, and you've got a bowl of superfood filled with rich antioxidants. Squeeze in some lime and drizzle with some olive oil, you'll enhance the flavor and then you can feel really good about what you're eating!! 
Omega 3's, Vitamin C, add some slivered almonds, and you can add zinc to that list! Lentils pair well with many different textures and nutrients of all kinds! Lately I've been experimenting with them and many ingredients that I normally add to regular salads. I'm a little obsessed with them this week. Ingredients:

  • 1 Cup of lentils
  • Orange segments
  • 1 Avocado
  • Pomegranate seeds
  • Olive oil, about 2 tsp.
  • White wine vinegar, about 2 tsp.
  • Juice of a half lime
Directions:
  1. Cook the lentils per package instructions. Let cool.
  2. Combine the olive oil and white wine vinegar. Shake or whisk to emulsify. 
  3. Add to lentils with all other ingredients. Taste and add more lime or dressing if needed.
