This is a popular party item that I learned to make from my BFF Christy Smith, who has been one of my besties for many, many years that I won't number now so that we don't feel old. Christy made these with spinach originally, but I was only learning to cook back then, so I took a shortcut, and subbed green onions because I had never cooked with spinach before.

Ingredients:
- Fat Free Tomato & Basil Feta Cheese
- Diced green onions or spinach
- 2 Packages Mini Fillo Shells (Frozen Fruit Section)
- 6 oz. finely chopped shrimp
Directions:
- Pre - heat oven to 375 degrees. Heat a pan with about a tablespoon of oil. When hot, add green onions or spinach and saute until wilted.
- Add shrimp and saute until pink.
- Add feta and mix until melted slightly.
- Spoon into shells and finish in oven at 375 degrees for about 10 minutes.
I've brought these to office parties, book club meetings, and served them at wedding & baby showers that I've hosted. I've made them for my neighbors as holiday treats, and I've received many compliments on them thanks to my bestie. If anyone else has a recipe to pass along, please email me at
